Luke's Lancashire Menu is a Winner

The Sparrowhawk in Fence, is the final venue in Marketing Lancashire’s Taste Lancashire Produce spring/summer dining programme, and offers a truly traditional Lancashire menu for diners on Wednesday 11 July 2012.

Marketing Lancashire’s Taste Lancashire Produce dining events, in partnership with some of the county’s finest restaurants, help demonstrate the abundance of superb produce available across Lancashire and the creativity and talent of local chefs. Diners enjoy a locally sourced, three course meal for £20 and get to meet and hear from one of the rural producers who has contributed to the special Taste Lancashire menu. 

To win the privilege of cooking for this Taste Lancashire Produce programme, The Sparrowhawk embarked on an internal competition to offer each of its chefs the chance to create a menu that would be a showcase for some of Lancashire’s finest produce.

Beating off his two opponents, the winner of the Sparrowhawk’s competition was 18 years old Luke Payne, from Nelson. Luke joined the Sparrowhawk team two years ago, whilst working towards a Modern Apprenticeship with Nelson & Colne Catering College, and is now working towards his Level 3 in Professional Cookery. He has been working as Junior Chef de Partie since completing his apprenticeship and this menu demonstrates his real enthusiasm for cooking and the inspiration he derives from good, fresh, local ingredients.

Chris Wrathall, Head Chef at the Sparrowhawk said “We are thrilled to host Marketing Lancashire’s Taste Lancashire Produce Evening, and very proud to see Luke in the spotlight.

“Luke’s menu shows his love of Lancastrian favourites, especially his passion for desserts, and it also shows he is not afraid to try and improve even established classic dishes.” 

The guest producer attending Luke’s Taste Lancashire Produce evening will be Leagram’s Organic Dairy of Chipping, whose Lancashire cheeses feature on the menu.

 Grilled Smoked Haddock with Lancashire Cheese Rarebit,

Plum Tomato & Rocket Salad

  Mains

 Locally Sourced Rump of Lamb, Rosemary Hash Brown,

Minted Pea Puree & Rich Balsamic Jus

 Traditional Rag Pudding with Homemade Mushy Peas,

Pickled Red Cabbage, Buttery Mashed Potatoes & Rich Ale Gravy

  Desserts

 Rhubarb & Custard Crème Brûlée with Homemade Ginger Bread Biscuits

 Lightly Spiced Apple Pie with Lancashire Cheese Ice Cream

As part of a programme of activity to raise the profile of Lancashire produce, Marketing Lancashire has developed and has promoted a series of these Taste Lancashire Produce evenings. The restaurants and producers benefit directly from the income generated by consumers attending these events and through the creation, sourcing and celebration of these special Lancashire menus.  

The marketing of this event forms part of the Food Connect programme, for which Marketing Lancashire has secured funding from Defra’s Rural Development Programme for England (RDPE).  The funding is to support food tourism activities, which includes the marketing of events which bring together suppliers, chefs, restaurateurs and customers, to demonstrate the breadth of local food on offer in Lancashire and the skills that can create exciting and ‘mouth watering’ dishes.
