Lancashire HotShot full of Eastern Promise

Lancashire and Blackpool Tourist Board’s (LBTB) young talented chef initiative, Lancashire HotShots is heading to Stanley House, Mellor for a menu inspired by some of Lancashire’s finest produce. Booking is now open and the event which takes place on Tuesday 20 September 2011 is expected to be extremely popular – early booking is essential.

Stanley House is renowned for culinary excellence in exquisite surroundings and the next Lancashire Hotshot chef, 22 yr old Ribhi Abdo,  is quietly confident that his special menu will live up to his guests’ expectations.  He has a lot at stake as his most important critics, his mum and dad, are amongst the first to book their table.

“They both have a true passion for food” says Ribhi “I grew up in a house surrounded by international dishes and interesting produce as my dad is from Jordan and my mum from Dublin. They cook the best Kofta.  It’s delicious, a wonderful mix of lamb and okra – a bit like a Middle Eastern Hotpot.”

Ribhi trained at Preston college and after various apprenticeships, including one with champion of Lancashire food Paul Heathcote, arrived at Stanley House where he is now Chef de Partie

Steve Williams, Executive Head Chef at Stanley House Hotel commentated;

“This is a fantastic opportunity for Ribhi to showcase his creativity, he is humble and hard working, the perfect traits for any budding young chef – he’s an asset to the team.  I hope he continues to go from strength to strength in the hospitality industry,”

Creamed soup of Bob Ashcroft’s cauliflower

Confit belly of Bowland Pork

sautéed Goosnargh chicken livers, pear salad and celeriac remoulade

Roast best end of Fell Bred Lamb

ratatouille vegetables, anna potatoes and basil

 

Pan fried fillet of Fleetwood caught Cod loin

baby fennel and mussel ragout

The Lancashire HotShots programme was developed by Lancashire and Blackpool Tourist Board to help raise the profile of new talent working in the Lancashire food industry. It provides young chefs with the opportunity to take over the running of their restaurant for one night – under the watchful eye of their mentor Head Chef or Chef/Patron. 

This non-competitive environment allows the Lancashire HotShot to create their own menu and members of the public the chance to be amongst the first to spot a culinary rising star!
